Here’s how I prep these the night before:
In a large bowl, combine flours, sugar, baking soda & baking powder, cinnamon and salt and cover the bowl. In another bowl, beat eggs; add oil, milk and vanilla, cover and put in the fridge.
Grate the carrots (just washed and unpeeled is fine), put in a plastic baggie and put in the fridge.
Combine coconut, raisins and nuts in a baggie and leave on the counter with the flour mix.
Peel and chop, or grate, the apples and add to egg mixture. Stir the carrots, coconut, raisins and nuts into the egg mixture and then stir the wet into the dry mix. It will be very thick.
Grease 10 jumbo muffin cups and fill 3/4 full. Bake about 22-25 minutes at 375° Let sit 10 minutes after taking out of the oven then removed from pan, they should come out easily. You can also use paper muffin liners.
This makes about 18 regular size muffins but who wants to eat a regular size muffin when you could have a JUMBO muffin, right??!!
Also, I don’t measure the apples, carrots, coconut, raisins and nuts very exactly. Today I had 3/4 cup of coconut left so I threw it all in. Also the one large apple I had made about 1 1/2 c. after it was grated and I didn’t worry about it, turned out fine.
